Cranberry, Port and Orange Conserve.

For those who buy the dubious jars of cranberry sauce for the turkey dinner, perhaps this recipe may not be for you.
It is sharp and sassy, but oh so easy to make.

A pack of fresh cranberries – I used Ocean Spray.
Juice and zest of a good sized orange
A generous glass of port – ruby or tawny, either will do.
Sugar to taste.

Place all the ingredients in a saucepan and bring to the boil.
Simmer until reduced by about a third in volume.
Cool and place in clean jars.
Store in the fridge.

The sugar content is a personal thing – I quite like my conserve to be quite sharp, which may not suit all tastes. Add in tablespoons and taste regularly – a cook’s perk!
