Tabbouleh – Cheat’s version

Tabbouleh is sold here in France by the bucket load as it is a firm favourite with the French as part of the entrée that requires no preparation.
I find that even the better makes tend to be rather bland, and this is what I do to mine to perk it up.
I tub/pack of tabbouleh salad
A small pack of feta cheese, crumbled
About 8 sun dried tomatoes in oil, drained, and chopped
A small handful of pine nuts – dry toasted in a pan
A few spoons of the oil from the sun dried tomatoes.
A quarter of a cucumber, peeled and cubed.
Put all the ingredients into a large bowl, except the oil and nuts. Stir well. Add the oil and stir again.
Before serving, toss over the pine nuts. It’s that simple and really delicious.
